Healthy Banana Nut Muffins
These banana nut muffins make for the perfect healthy sweet treat. Made with almond flour, these muffins are a lower carb alternative to regular banana nut muffins. Made with simple ingredients and sweetened by maple syrup, these banana nut muffins are the perfect treat to grab for breakfast or dessert.
Healthy Banana Nut Muffins
makes about 8 muffins
Ingredients:
2 large overripe bananas
2 eggs
1 tsp vanilla extract
1/2 cup maple syrup
2 tsp cinnamon
1 tsp baking soda
1/2 tsp baking powder
1/2 cup walnut pieces
2 cups packed almond flour
Muffin liners
For topping:
1 tbsp brown or coconut sugar
1 tsp cinnamon
Handful of walnut pieces (optional)
Instructions:
Preheat oven to 350.
Add bananas to large mixing bowl and mash with fork. Add the rest of the wet ingredients (eggs, vanilla extract, and maple syrup). Whisk.
Add the dry ingredients (cinnamon, baking soda, baking powder, walnut pieces, and almond flour). Mix together.
Add muffin liners to a muffin tin and fill each liner with 3 tablespoons of batter.
Mix sugar and cinnamon together in small bowl and sprinkle on top of muffins. Top with walnut pieces.
Bake for 20-25 minutes.
