Creamy Hummus Pasta with Turkey Bacon & Sun-dried Tomatoes
serves 4
Ingredients:
Box of gluten free penne pasta
1/2 medium yellow onion, chopped
2 garlic cloves, minced
3 cups spinach
1 cup hummus
1/4 cup sun-dried tomatoes, chopped
3 heaping tbsp nutritional yeast
4 slices of uncured turkey bacon, chopped
1/2 cup reserved pasta water
2 tbsp olive or avocado oil
1 tsp ground pepper
1 tsp Italian seasoning
Instructions:
Cook pasta according to pasta instructions, reserving 1/2 cup pasta water.
While pasta cooks, add oil and bacon to skillet, cooking about 5 minutes.
Add spinach, sun-dried tomatoes, garlic, and seasonings to skillet, cook for about 2 minutes.
Add hummus, nutritional yeast, reserved pasta water, and past to skillet. Mix until sauce is evenly incorporated with pasta.
