Creamy Hummus Pasta with Turkey Bacon & Sun-dried Tomatoes

serves 4

Ingredients:

  • Box of gluten free penne pasta

  • 1/2 medium yellow onion, chopped

  • 2 garlic cloves, minced

  • 3 cups spinach

  • 1 cup hummus

  • 1/4 cup sun-dried tomatoes, chopped

  • 3 heaping tbsp nutritional yeast

  • 4 slices of uncured turkey bacon, chopped

  • 1/2 cup reserved pasta water

  • 2 tbsp olive or avocado oil

  • 1 tsp ground pepper

  • 1 tsp Italian seasoning

Instructions:

  1. Cook pasta according to pasta instructions, reserving 1/2 cup pasta water.

  2. While pasta cooks, add oil and bacon to skillet, cooking about 5 minutes.

  3. Add spinach, sun-dried tomatoes, garlic, and seasonings to skillet, cook for about 2 minutes.

  4. Add hummus, nutritional yeast, reserved pasta water, and past to skillet. Mix until sauce is evenly incorporated with pasta.
