Creamy Hummus Pasta with Turkey Bacon & Sun-dried Tomatoes

serves 4

Ingredients:

  • 6oz gluten free penne pasta

    1 large yellow onion, chopped

    3 cloves garlic, minced

    3 handfuls spinach

    1 cup hummus

    1/4 cup sun dried tomatoes, chopped

    3 heaping tbsp nutritional yeast

    4 slices of uncured turkey bacon, chopped

    1/2 cup reserved pasta water

    2 tbsp olive oil or avocado oil

    Pinch of salt & pepper

    1 tsp Italian seasoning

    1 tsp garlic powder

    1 tsp paprika

Instructions:

  1. Cook pasta according to package instructions, reserving 1/2 cup pasta water.

  2. While pasta cooks, add oil and onion to large skillet on medium-high heat, cooking about 3-5 minutes. Add bacon and cook about 3 more minutes.

  3. Add spinach, sun-dried tomatoes, garlic and spices to skillet, cook for about 2 minutes.

  4. Add hummus, nutritional yeast, reserved pasta water, and pasta to skillet. Mix until sauce is evenly incorporated with pasta.d past to skillet. Mix until sauce is evenly incorporated with pasta.
