Greek Chicken Meatball Bowls

serves 4

Ingredients:

  • 1 lb ground chicken 

  • 1 egg

  • 1/2 medium red onion, diced

  • 3 garlic cloves, minced

  • 2 tbsp dill 

  • 1 tsp garlic powder

  • 1 tsp cumin 

  • 1 tsp paprika 

  • 1/2 tsp pepper

  • Pinch of salt 

  • Avocado oil 

    Dairy free tzatziki sauce:

  • 3 tbsp unsweetened coconut or almond yogurt (greek yogurt if not dairy free)

  • 2 tbsp dill 

  • 1 tbsp lemon juice 

  • 3 garlic cloves, chopped

  • 1/4 cup cucumber, grated 

    To serve:

  • Quinoa

  • Cherry tomatoes 

  • Cucumbers 

  • Dill 

Instructions:

  1. Combine ground chicken, egg, red onion, garlic cloves, dill, and seasonings in a large bowl. Mix & roll into balls. 

  2. Make quinoa according to package instructions. 

  3. While quinoa cooks, cook meatballs. In a skillet with a drizzle of avocado oil, add meatballs and cook about 5-7 minutes per side on medium-high heat. 

  4. Make tzatziki sauce. grate cucumber & squeeze juice out. Combine cucumber, yogurt, dill, lemon juice, and garlic in a small bowl. mix.

  5. Once quinoa and meatballs are done cooking, add quinoa to a bowl and top with meatballs. 

  6. To serve, add cucumbers, cherry tomatoes, tzatziki sauce to bowl. Top with dill. enjoy!
